Local Flavours Await

The Hotel Restaurante Casa Manolo was born from the effort, enthusiasm, dedication, and hard work of an entire family.
The adventure began in 1982 with our parents, Manolo and Susa, residents of Páramo, a small mountain village where livestock farming and mining were the heart of the community. Together, they decided to take over the village bar, which was being transferred to new management. They rented it with great sacrifice, but also with the determination to move forward.
In 1989 , they created their own business: a bar, grocery shop, and restaurant that gradually grew over time.
As the years passed, both the surroundings and the needs of customers evolved. Tourism began to grow, new businesses appeared, and a new way of life emerged. In 1997 , they took a very important step by opening the first mountain hotel in the region and expanding the restaurant.
Since 2008 , the project has been in the hands of the next generation: Ana, the middle of the couple’s three daughters, and her husband Manolo. Ana and Manolo’s main goal is to preserve the traditional and family spirit, both in the cuisine and in the way they treat their guests, while also adapting the project to a new stage. Homemade cooking is their hallmark, prepared with care, affection, and respect for local products.
Today, we are experiencing a very special moment. Every day, the number of customers continues to grow. We welcome many people who come to eat, rest, and enjoy our hiking routes in a unique natural setting.
Although the work is demanding and not always easy, we are fortunate to have a team of employees who are a fundamental part of the project, as well as the constant support of our family. Seeing what we consider our home filled with customers enjoying our work is the greatest reward.
